About The Winery:
Our winemaking endeavors to always correlate and continue the hard work accomplished in the vineyard. Simplicity in the cellar, minimal interventions, utilizing ambient yeast for many lots, minimal oak influence, low sulfur and always preferring gravity for moving wine whenever possible. Dedicated blends are a focus for ATTIC SALT, typically with these blends being decided before the grapes are ever harvested, while DAFOE leans to more traditional single vineyard wines.
